In America we add some drained crushed pineapple and raisins to the batter along with the carrots. If made in a bundt pan you can make the icing a bit runny and spoon it over the cake and let it run down the sides. My cousin's wedding cake was made like this using different size bundt pans to make a tower. Almost a volcano effect lol It was so good. :o)

@jakeanddar Vanilla Extract is made from real vanilla. Vanilla Essence is an artificial vanilla flavoring. They are interchangeable in most recipes. Extract is more expensive, but has a much stronger, more genuine vanilla flavor ;)

Hey, You could also add orange zest into both the cake and icing/frosting. It makes quite an addition to the carrot as it complements it well.
