  • Have you tried placing eggs in shell in to boiling water for 30 sec before cracking - firms up and hols whites together

  • fun fact, poached eggs are the best egg to eat for protein, even higher quality protein than raw eggs. So if you want to be a cool dude drinking raw eggs before the gym, dont, just eat poached eggs!

  • It's true about the freshness of the eggs...I tested it (I am that sad) with five day old egs and real fresh eggs from my work-'small little farm. And yeah, the whites kept together with the fresh and spread out all over with the old. And thanks, Chef John, for NOT being a anti-calories fascist. Very refreshing, these days. :-)

    Some people put heat proof custard cups or ramekins on the bottom of the pot of simmering water to contain the eggs while they cook... never tried... i just drop them in gently, close to the water's surface, and dont stick utensils in immediately..

  • A cooking tip learned from Iron Chef America: Swirl the water gently, the drop the eggs inside. the swirling water will make the egg whites to wrap around the egg yolks, which will look much better.

  • Do you have dill in the US? I thought it was only us Scandinavians that used dill in cooking. In most parts of Europe dill is only used as decoration i flower arrangements. If you ask someone in France for dill they'll give you a dozen white roses with dill. We use it with potatos, fish, eggs and cold sauces. // Pelle the Swede

    this is my kind of breakfast! Absolutely no doubt!!

    I think the water was still to hot, when the eggs dropped in.... it was still a little boiling, that's what messed up the poaching... (relax, just my opinion...)

  • Chef John, could you do more demos or tricks that you would use for cooking for crowds? The ice water bath for the poached eggs was a great idea I'll be trying soon and your oven fried wing videos I've also learned a lot from. Cooking isn't really the hard part, but rather figuring which ingredients/items to hold until friends/family arrive.

  • I've never been a fan of poached eggs ... too much like work and they don't come out round!

    Since the mid-1970s, I've been steaming my eggs in an egg ring for my homemade Egg Mc[Insert your last name here].

    I use my small cast iron pan, an egg ring, a half shotglass of hot water for steam, and a cover.

    45+ seconds later, I have a perfectly round, soft egg with a wet yolk. 55+ seconds, I have a firm yolk for a sandwich. (time depends on size of yolk.)

    And the eggs always come out round!

  • @GundamFreedomz Exactly. This is the third video he's made about poached goddamn eggs. The second one he made used the method you mentioned (the best way, imo). I don't know why he switched back to the noob method.

  • @GundamFreedomz I avoid the pain by putting the egg in cling film, before poaching. Works great for any egg. Is also good for poaching white fish.

  • i dont think that the eggs separated because they werent fresh but because he didn't put enough vinegar. Also, from my experience and some other tutorials I've watched in youtube, I believe that a small whirlpool would have make things even better. Still a nice video and fun to watch as always

  • @foodwishes chef john if your using old eggs a tip is to make a volcano in the water by using a fork to spin the water then place the eggs in the direction the water's going! all that old egg whites will wrap around the yolk making it perfect!! ^_^

  • @ronnin2011 If the water is boiling too hard, it means that the water is way to hot to poach eggs. At one temperature, the whites cook, and at a different, higher, temperature, the yolks cook. And the goal is to cook the whites, and not the yolk.
