@freespeechisataste this targets the core much more then a regular squat would. i like to do zerchers starting in a 90 degree squat position....helps with explosion
i dont think these type of exercises are nesscary it seems like good training for a strongman competition so you can somewhat simulate the obstacles used in those competitions

I know what you're talking about. What this guy does is that he uses a quite wide stance so as to allow him to go as far down for the ROM to be limited by the touch of the bar to his legs instead, which is at about parallell. You could try it and see if you like it. It doesn't allow you to handle as much weight, but it does allow for more movement. Perhaps doing both is the best.

Doesn't hurt the elbows at all, actually. Hurts the skin on the forearms though, and leaves very distinctive bruising until the body adapts. As far as minimizing the pain, use a thicker bar if one is available, or wrap a towel if you must.
