Create a saturated solution of sodium acetate in hot water. Then allow it to cool. Since a warm solution can hold more solutes than a cold one, the solution will become supersaturated. I done right the sodium acetate will crystalize as shown in the video.

nothing..sodium acetate is harmless to touch.. i make it at the factory i work at in the UK .. its just like salt ..its stings when its comes into contact with a cut and thats all, unlike salt tho.. i wouldnt recomend eating it, its horrible when some of the dust geting in your mouth, you can taste it for hours afterwards :)

@tychomagneticanomaly Just to let YOU know, adding baking soda with vinegar, then boiling it, will create a thin layer of sodium acetate as the sodium bicarbonate looses it's carbon atoms and attaches to the dilute acetic acid.

when you do get it to work you can just put it in your microwave oven heat until liquid and put it back in your fridge. it should be about the same amount of liquid so if some water boils out just add just enough to replace it

It's a solution (in this case water & sodium acetate) that was boiled to allow for more sodium acetate to be absorbed into the given amount of water so once the one final crystal was added it started the chain reaction of crystalization (NOT FREEZING) of the original solution.
guys please dont believe what you really see... although what he did was plausible he pre-diluted the water in the caontainer with a lot more of the sodium acetate that he dropped in. When that one small piece of sodium acetate dropped in the super saturated water of sodium acetate it just began the chain reaction of crystilation due to an exothermic reaction in which the water gives off a lot of heat therefore allowing it to freeze.
what do you think a supersaturated sollution is? The same thing happens in the atmosphere, it may be at 101% capacity, along comes a current of air and disrupts the sollution and boom! you get storm clouds and rain. Any super saturated sollution is highly unstable and can come out of sollution very easily.

Are you heating the water? You don't just mix it, you have to supersaturate it.
