The mold spores are the only visible (ie. colored) bits of the mold. The actual fungus can still exist deep inside the cheese and cannot be seen by the human eye...so while I'm sure you could eat the cheese and not die, you're likely still eating mold in your cheese.

most cheese is made by the fermentation of milk by bacteria, mold on cheses is a rotting process that some cheese is famous for. its just a matter of taste, some people do not eat fish. so how do you know, its easy, if it has mold on it when they sell it thats fine. if you bought it wihout mold and it grew while in your ownership its rotting. See thats not so hard now is it.

It depends on the mold though.

If you have a room specifically to store cheeses at a monitored temperature to grow a certain mold, then the mold thing would most likely be okay to pass, but most people buy packaged sliced cheese and store it in their fridge along with other items such as raw meat and produce so I wouldn't take the chances. Since it's been exposed to other bacteria, you should just throw it out.

SOME cheeses are further exposed to very specific molds like Penicillium candida or P. camemberti that grow on the outside of a soft cheese. The mold forms a white crust and contributes to the smooth, runny, or gooey textures and more intense flavors. There may be some live mold activity in certain blue cheeses, but that is the exception. In short, Cheese /= mold.

That decomposition is monitored and planned. You really should eat mold on any food unless it was controlled mold, but usually it isn't bad for you.
