    They are retracting their siphon back to their body (which is 100% stationary as an adult; their "foot" acts as an anchor for the clam, and the neck does all the moving up and down)... the water you see shooting out, is what the duck had circulating through its siphon. When disturbed, the clam ditches the circulating water very quickly to make the retraction of their siphon quicker (as well as possible)

    Those look like "horse clams" (gaper clams)... fun video though.
