A normal rubiks cube probally wouldnt work, but if one modifies one so it will be possible for a Mantis to manipulate it, then I'm pretty certain you could teach him how to solve it, especially if you make him associate the solved cube with food.
mantis shrimp have 9 photo color receptors in their eye. humans have 4. mantis shrimp can see more than double the amount of color that we can see. meaning that there are colors that are invisible to us.
