in single player mode most of the time you can't with exceptions to d-day and comrade sniper missions. although, on multiplayer, you can choose whatever weopan you want.

i can tell that was veteran mode the way that one hit made the viens pop out, so he had to be careful. Considering that sometimes it takes forever to do just something in that difficulty. unless u are in the 1st Level
