Because the first armor is kinda fake, Aries Mu changed the appearience so people would think it was fake.

In the anime it goes back to it's real look after it goes into the lake.

In the manga I don't remember with details, but I remember is explained by Mu in more detail.

Aiolos was the chosen one by Grand Pope of Sion.

Grand Pope Sion was getting old after 232 of ruling. Sion trained Aiolos and Saga. He choose Aiolos. while he ordered Saga to assist Aiolos. Saga later attacked Sion by surprise and granted him self as a pope.

I was talking about the actual Masters who taught Aiolos or Saga which are unknown. The Grand Pope/Grand Master/Head Pontiff is Sion of course. The anime had an original character Ares. :)
