The most recent info is that the new ride will be called "Star Tours: The Adventures Continue"
New destinations will include Tatooine and Coruscant. And the ride will be set in-between the two Star Wars trilogies.

@TheLonelyPinecone This video (and Star Tours as a whole) is prerendered. Prerendered video will always look better than what video games can achieve (see the difference between cutscenes and gameplay).
