the classic music is in the game, it's just taken out of the video (probably have the volume turned down)

They're said there are a number of hidden unlockables in the game, so much so that the disc is crammed to capacity.

Referee Mario may well be one of them.

As for the classic music, if you've been looking at ANY of the Punch-Out previews, they're playing it full blast.

You simply can't hear the TV here over the crowd.
