  • @gastonlang Thanks again for the recipe, it turned out really well! I really need to get my hands on some of that andouille next time, none of the three supermarkets had them - my girlfriend's comment was the only part she didn't like that much was the sausage (I used Kielbasa, which was OK but not great) - also, can you believe there was no creole seasoning at any of the supermarkets either? I had to use Zatarains pre-seasoned rice & a makeshift mix to cover for not having that.

  • @Rungreenpoint I am glad you tried it and it turned out pretty good. The andouille does make it, it adds the smokey flavor to the whole dish. You can make your own cajun style seasoning also. Something like this.

    1tsp Cayanne pepper

    1tsp Black pepper

    1tsp Smoked Papricka

    4tsp Salt

    That would be the basics and you can add Garlic or Onoin Powder, as well as , anything else you like.

  • OMG! That looks so good. I have learned so much from this video. I make it for my family my own version lol lol. But I have to get that Zaterans rice and I didn't know about cooking the rice with the meat and veggies. How would that work if I am making this for a large group of people like 15 to 20. i always make the meat with the red sauce (and my sauce is too saucy compared to yours) and the rice on the side. Do you cook the oysters with the meat and veggies or last?

  • @queenofweaves916 It works great, we cook this in a 20 gallon black iron kettle especially made for jambalaya. It will feed a hundred people. Good luck and let me know how it comes out.

  • Thanks for the great recipe! This is by far the best Jambalaya I have made. I think your method of sweating the vegetables and meats together with the seasonings is key. Do you have a good dirty rice recipe?

  • Thanks for the compliments. Dirty rice is a fantastic dish and I am working on perfecting my recipe. Here in the south it is made with the giblets of a chicken as well as the wing meat. I am trying to fine tume it. Please subscribe and I will get it out.

  • Speaking of salt, anybody know if there are seasonings out there with sea salt as opposed to iodine?

  • there is no conclusive evidence showing salt causes blood pressure problems. your problem is far more likely due to using iodized table salt. it is poison. go to whole foods or a health market and buy sea salt to cook with. your problem is more likely due to your ratio of sodium to potassium which means you could actually not be eating enough mineral salt. look up "your bodies many cries for water." take it or leave it, but it is worthy of investigating.

  • Sorry, Bell pepper is a cultivar group of the species Capsicum annuum. Cultivars of the plant produce fruits in different colors, including red, yellow, green and orange. Bell peppers are sometimes grouped with less pungent pepper varieties as "sweet peppers"

  • @byen8 It's that big ole green thing at around 1:30 setting between the onion and the spices. It's a sweet pepper, not hot. If you all have cubanos which are longer and yellowish, that could also work.

  • One of my favorites too I mean. I remember when I tried jambalaya first. I was thinking "Okay, looks like pretty good rice." But, then I tried a bite, and my mouth exploded. There is just more flavor per pound then ought to be legal.

  • Jambalaya is one of my favorite foods. So full of flavor. I like to have it with a bit of corn salad.

  • Yum! I gotta try this one! Awhile back I cooked up your BBQ Bacon Bomb and it was WONDERFUL! I'll have to see if I can find Zatarain's rice around here. So far, I haven't seen it anywhere, but we do have the seasoning. available I'll have to see if I can get the rice somewhere online. I have always loved that song. When I was a real little girl and he got to the filet gimbo part, I thought he was saying billy gumbo, so that's how I'd sing it. Lol. My folks would just die laughing.

  • Yes, chicken stock would provide extra flavor to the dish but you didnt have it on hand. Do you think that adding salt alone without chicken stock will have the same flavor?

  • There is a lot of flavor in the sausage and chicken thighs, however, it wont be the exact flavor as with the stock. I do think it,s pretty close. I hope you try it
