I use a double boiler to spice maple syrup. Just want to loosen it up, not change the water content. I mean REAL maple syrup not that cheep fake stuff. Cinnamon is good, but if you want really good try cloves, just be careful with cloves, they can overpower the flavor very easily.

Hi! I'm a Canadian living in Japan, and we're having a "Canada Culture" event this weekend. We are hoping to make maple taffy on snow, but thought we had to boil the maple syrup first (which has been pretty difficult!). Am I correct in thinking that in your video, you just poured the syrup on to the snow, and then let it harden a little?? I'd really appreciate any advice you can give within the next 72 hours. Thanks so much!!! :)
What you see being poured was the boiled sap that is taken directly from the trees. The sap should be boiled to around 234 degrees Farenheit. You have to get alot of sap to get a small amount of syrup to pour to make the taffy. FYI, you can't do it by boiling the syrup...never heard it being done like that - you have to start by boiling the sap from the trees. If you need snow - there's tons of it here in Canada! We've had over 400 centimetres of snow this winter so far..and more is coming!
i make this at home all the time. i boil the bottled maple syrup evaporating about 66% of the water from it, pour it over a plate of crushed ice and then eat it. so it can be made from syrup =]

Yup, Mi'gmaq from Listuguj. Good to know that other Mi'gmaq have a chance to get a bit of home when many miles away - especially Calif.!
