And, just to answer BigNasty's question, the theory of evolution would say that wherever these goats were endemic favored that fainting behavior. One possibility is it could have been an escape mechanism for predators who didn't like dead-looking food.

Now on to more serious matters:

This is nothing to do with evolution. The genetic mutation that caused this physiological phenomenon would have died out in the wild (they would have been vulnerable to predators: natural selection), but these animals are kept in captivity and bred for this trait (and protected from predators) so they have survived. They do not disprove the theory of evolution, they are an example of selective breeding.
