@VillageThinking - in the US what is called "Canadian Bacon" is not back bacon at all. Canadian Back bacon or peameal bacon is brined and coated with cornmeal and needs to be cooked. I've never figured out why in the US "Canadian Bacon" is actually a pre-cooked ham. I only see US "Canadian Bacon" in the stores in Canada if it was imported from the US, go figure.
