Japanese Americans were interned in what could accurately be described as concentration camps during world war 2. Where's the right to peacefully assemble? What were their crimes? Then there's the prohibition period of the 1920's where certain substances was made illegal. Constitutionally speaking what "right" was violated?

Regarding prohibition, there was an actual Constitutional amendment making alcohol illegal, meaning prohibition became part of the Constitution and thus the Supreme law of the land. The repeal of prohibition was done with an amendment repealing that amendment.

The Constitution is indeed a piece of paper but upon that piece of paper is the foundational and Supreme law of the United States, which cannot legally be violated by any law drafted by any state or by the federal legislature short of a Constitutional amendment.

Further, those amendments do not occur "on a whim," they require the legislature to propose an amendment which must be ratified by 75% of all state legislatures before it becomes law. The executive isn't involved.
