I plan on racking it today and letting it go for another week before pasteurizing and bottling. I did indeed taste it. It was very pleasant and rich, but I've actually never tasted sake before so I have nothing to compare it to.
I let a few friends taste it and so far the response has been positive :)

I've made minimal progress on the guqin. both because I lack the tools and want to see a real one before I continue, if I can. but, I might make strings out of cotton, hopefully that'll sound interesting.
