  • Great recipe ! It makes the potatoes moist and cirspy at the same time ! sort of like heathy fries :) It is so much better then just throwing raw potatoes in the oven - then they do get crispy but they are too dry !

  • I do this now when ever I boil potatoes. A few sprigs of thyme or rosemary, smashed garlic cloves and some bay leaves. The potatoes come out nicely seasoned with a subtle herb and garlic flavor.

  • Chef, you should try this recipe that is extremely popular in Ukraine, my family and i have been making it for as long as i can remember... Boil new harvest baby potatoes, strain, dump a generous amount of butter on them and freshly chopped dill, salt and pepper... best thing ever

  • For breakfast, I like cooking down some chopped up bacon and then finishing par-boiled red potatoes in the bacon fat with whatever seasonings are available, like generic dried italian herbs or cajun seasoning. Top it with a fried egg or two and you've got a great hangover breakfast.

  • Hi Chef John, I want to tell you that I prepared your recipe 4 times in 2 days. The first time as a test and my boyfriend loved them so much I prepared another batch. The next day I had people over for a BBQ and made 2 batches. People loved them and they are so simple and delicious. Thank you! :)

  • I made these last night. They went a lot further than full-sized baked potatoes and were tasty and a lot healthier than loading a potato with creams or butter. We had them with burgers and with a little ketchup, but they tasted fantastic with nothing on them- way better than french fries!!

  • I LOVE roasted potatoes. What I usually do is I mix them potatoes with some crushed garlic, thym, sea salt, black pepper, and olive oil. They turn quite delicious. But, this technique seems worth a try.
