I tried egg less cakes with condensed milk, curd, aerated drinks etc and failed to get the fluffyness which we get when we use egg.
I tried a lot to replace egg but was not successful till date. If somebody can suggest a practical replacement which they have tried and been successful, I would also be happy to know about.
@gayatrivantillu This message was posted 2 years ago so I am guessing new products must have been introduced in the Indian market. There is an egg substitute made out of soy beans. It replaces eggs in almost all recipes except the ones where egg plays a prominent part eg: egg curry, omelet, etc. Its sold in the organic section and is simply labeled egg substitute. does wonders in baking. however a meringue you cannot expect it to make, it does most baking jobs well.
in what heat and how long please?
