Thanks for the recipe & great explanation, this way we are getting recipes with a nice piece of culture.
Just a tip; For grating vegetables I use Cuisinart (Kitchen Aid also has some models) blander which have beside the chopping blade also various grating and slicing blades, this will make your father & you happy at the same time
Thank you for the kind words. In terms of food processors. We have two, one in New York, and one in our place in Vermont. The one in New York is a Black and Decker that I've had for years, and it still works well. I cannot at the moment recall the brand of the processor I use in Vermont. But any good processor will do. I just advise it should be a medium size, not a small one.
I like your video, very well explained, fast, and I love the short cut. I didn't think of using the processor. Que processor usastes? I like your teaching style it's the best I have seen. You make pasteles look soo easy. :)
Mr Rivera, thank you for these videos! I have relied on my Abuela for pasteles at Christmas but now it's time for the new generation to learn. She has her way; you have your way; I need to find my way. This is a great lesson. I feel so proud of my heritage. You have such charisma, please keep cooking and teaching. Thank you.
i love you!!! you are so patient. i'm 31 nyorican and never made pasteles and only started cooking like my parents when my son was born. i've perfected carne guisada, working on my arroz con gandules and flan. pasteles is my next "endeavor"..lol thank u thank u thank u
Grated everything by hand? You are a better person than I. In our family, my father was the one who grated everything by hand. He, like you, was a traditionalist. And there is something to be said for tradition. But I feel for your sore hands. Pork is also the traditional meat filling in the Caribbean. Glad you enjoyed the recipe.
I made pasteles for the first time this Christmas. For the masa, I used the same ingredients, except platano. I grated everything by hand and was sore the next 2 days!!
I used pork for the meat filling and no raisins... Hope you enjoyed. They looked very good!
Yes. Food processors are a taboo. To this day, my mom insists on having us grate the ingredients by hand. But, honestly, it's a pain! Also, I noticed no difference in consistency or taste whether done by hand or with a food processor or blender. I am one for convenience and results.
Me gustó mucho su video. La preparación de los pasteles es realmente un proyecto. Usted lo explica de una manera clara y sencilla. La única pregunta que tengo es si usted le agrega sal a la masa?
I made these just as noted here ( just added a bit of milk to the masa ), and they are delicious! I was in doubt as to whether or not to use a food processor but let me tell you, they taste just as good as pasteles grated by hand. I bought your book for some more cooking ideas presented in an intelligent and loving way. As a nuyorican, let me say, gracias hermano.
Bananas are an accepted way of making pasteles, as long as it's green plantains. I don't know if it would work with regular bananas. If they do, let me know.
Thank u, thank u sooo much for this vid!!!! The making of pasteles was dying in my family. I guess because my grandmother was the only one who knew how to make them. Sadly she passed away when I was 8yrs old. And so this recipe went with her. So because of this vid, I can now revive this dish a teach my children this fantastic, and VERY Puerto Rican dish!!! Again, thx! :-))
Thank you for the kind words. I am fortunate enough to have married an Irish lass. So you could say I am one at heart. However, I do not omit the green peppers. I love them, and my wife hates them. We compromise most of the time.
Enjoy the recipes and good health, good cheer to you and yours.
I recieved a copy of ur cookbook back in 94, I am Irish but grew up with alot of Puerto Ricans and have some married into our family, I am NO stranger to this food ! I luv ur book and have used most of the recipies myself, I just omitt the green bell peppers, except in the sofrito, I have given out almost 2 dozen copies to friends, I also luv all the stories of ur family as well ! I actually feel as though I know them all, to me ur book is the P/R cookbook bible ! ! !
Yes, I am indeed the author of "Puerto Rican Cuisine in America" (among other books). And it is my immense pleasure to share the video with all those who enjoy good cooking and good food. Feliz Ano Nuevo.
Are you the author of the book, "Puerto Rican Cuisine in America"? If you are, it IS INDEED a pleasure to meet you sir, and thank you for sharing this video with us.
Glad I could be of help. As stated, pasteles is a project---but worthwhile project. The results are worth every minute of it. Enjoy, and Happy Holidays.

Love your modern approach to making pasteles. Also, love that you use a food processor which is so taboo in my family as well lol.

Basicamente, yo no uso mucha sel en mis recetas. Eso es algo individual. Use la sal a su preferencia y disfrute de los pasteles.
