Red is when Jet Li is telling the fake story, blue is when the King is tell version of the story, green is memory. White is actually what is happening. I guess the purpose of having these colors is so that the audiences can tell that they're watching different versions of the stories told by different people so that they wont get confused.

Why does Snow use a smaller sword than everyone else? The soldiers, Nameless, and Broken Sword all have swords that were much wider than hers.

I think it was just her sword of choice. Broken Sword could probably wield a heavier broad sword. Snow was using a thinner but more nimble blade, although her kind of sword is considered the de facto Chinese national sword nowadays, just like the Katana is the Japanese's de facto national blade.
