THe prequels mishmashed too many fighting styles. I would argue that the fights in the originals (A New Hope, Empire, Jedi) play out very much like a fight from any old Samurai films (1950s-Now): precise movements, slow buildup of tension/suspense, it's like watching a REAL kendo match. Kenjutsu does not require the wielder to make elaborate, wasteful movements: it's all about power and precision. The prequels went overboard with choreography: looks like dancing, not martial arts.

The point of the old lightsaber battles was that to main characters had their confrontation, mostly with words, but characters with only lines are or become boring so they added a action scene to entertain the audience at the same time but the information makes the same or more impact. In the new movies the lightsaber battles are only their because they needed a action scene.

Anakin vs Obi-wan from Episode III might be the most athletically impressive duel in the saga but this one is the best in terms of anticipation and emotion. Oh and the ending is just 1000X better

The props where altered or remade from film to film for various shots and what not. There is some spin off material that does suggest he made one between films to accommodate his robotic hands but it's neither here nor there with the cannon stuff.
