they are land crabs. They most likely used a burrow that was created by another creature and were wintering over. You do not describe local fauna. Nor geographic location. And only uneducated workers made the find. No one was there to document the type of crab. Lots of holes in your story.
I once put a cast net away in an ice cooler (no ice) after casting it a few times with no luck and put it in the trunk of my car. I forgot to take it out when I got home and discovered it 2 weeks later and found a small Blue Crab still alive caught in the netting. it was the middle of summer and quite hot. I felt sorry for it and drove 30 miles to put it back in the water.
My dad goes to Alaska twice a year, brings back Alaskan King crab, they put them on ice and they go to sleep. Take them out and they wake up and in the boiling pot they, lol.
The soil is alkaline, which slows crab metabolism. Being burried also increased carbon dioxide levels, forcing the crabs to undergo prolonged 'hybernation'. This also stops most harmful baterial growth, ensuring their longevity.
This is quite common in frogs, but rare in crabs.

their nickname is the livingdead crab simpley because they can be found in the bottom sea floor feeding on the remains of pretty much anything dead.
