my brain is about as fried as those latkes... were you there at Red's when she tried to make latkes and ended up setting off the fire alarm, and then they were first trying to cover it with towels, and finally they just broke it?
It's also really important to mention that using too little oil results in greasy latkes! I forget the chemistry of it, but if you want really good latkes, you have to use too much oil!

I freakin LOVE latkes. I had this awesome latke set at a restaurant, had sushi-grade salmon and a buttery sauce on it. SO good.
