  • It can get really hot, up to 65° Fahrenheit... it's never uncomfortable.

    I tuen au Lachs chalt räuchere,aber immer nur vor Wienacht so um die 30 Lachssiite.Im moment bin i a grossi Rauchchammere am Plane und baue..

  • under the wood chips is an air channel so [wet] chips smolder nicely - smoker has a big air intake on each end - on top all around smoke escapes...

  • what exactly is scotch cure? are you talking about dipping em in the liquer scotch? Im just curios Im looking to build a smoker alot like what you have there but on a smaller scale, and im always interested in new brines :D

    it's a long story - the simplest way to learn is reading the book: smoking Salmon and Trout by Jack Whelan - it's been around, good information.

    As I said: I like rum...

  • where did you got wire shelves net ?

  • one inch mesh salvaged from otter cages...

    made a frame 4'x8' out of 2"x2" with spacers every foot - I place 30 fillets on each rack or about 100lb, so you need support otherwise mesh will sag, pull loose from frame...

  • Sockeye salmon = red salmon

  • Red salmon is just another name for Sockeye, most people in alaska (where im from) call them Reds.

  • Does one really need a separate house or room to smoke fish? Can I do it on a conventional charcoal bbq?

  • Yes to both questions - with the bbq you'll get kippered fish since heat cooks it - our way is cold smoke, max.65˚

  • bears like fresh or spoiled fish or food in general - smoked out of the smoky house has never been a problem...

  • Now I have a pretty good idea on how much smoke to create while smoking the fish I'll catch tomorrow (1/25/07. Good video. When I get good at smoking fish, I'll make a how-to video and post it here at YouTube.

  • Hi alaskawill, Have done some smoking on a lot smaller scale than yours, just cold smoked cod and some cheese. Going to invest in a Bradley as space is at a premium and will try the cold smoked salmon.Not up to the standard required to show the world! happy smoking.
