Tim, doesn't the mead go flat and turn sour once the cap has been broken on the bottle? I have bought mead and, if I don't drink it quickly enough (within a day!), it'll go flat as with any beer. Albeit I find this technique fascinating, I remain somewhat skeptical as to it's practical use considering that it takes several weeks to extract/ tincture a fresh herb.
If it is a primed mead, it will go flat. But if not primed it last for quite a while but must be caped well and kept cool.
