  • Is there a reason you use absorbent paper to cover the lamb instead of kitchen foil or baking paper?

  • @GwresYnKernow I can field this question. Absorbent paper, such as you might use in your lavatory or to wipe up spilt jam from your kitchen floor has a greater densifying affect on the milk and cream. Tin foil or baking paper will cause the milk to sweat and curdle. However lavvy paper (unused) or Bounty will allow some air in and keep the sauce creamy.
