  • 1 splash of water on chocolate is enough to turn it lumpy and burnt, keep water away, your best of in putting chocolate into the microwave with a plastic container so the heat transfers but not as fast as metal. im the mother of chocolate i make it, melt it, crumble it and eat it =)

  • I would just put the pan with the chocolate over the hob for a few minutes (w/o the chocolate of course) and then put the chocolate in and then put it over the pan. Water and chocolate doesn't mix.

    An easier way to form the truffles is to use a melon baller - works great! Dip it in hot water each time and out they pop.

    1. Melt chocolate and butter.

    2. Add cream

    3.Now fill the cooking pan with water and boil on max heat for 9 hours.

    Now for the Ganash (required for good truffles)

    4.Add a Ganash/Ganesha figurine into the mix.

    5.Get high on something hard.

    The figurine should now turn human size and take you into magic Hindu rainbow world, there you can eat as much truffles as you want.

  • actually, you can mix chocolate and water. the trick is to start with solid chocolate and melt it "into" the water as they do in this video, but you should never add water to already melted chocolate. that's almost always a recipe for disaster. it seizes. that said, you really don't need water to help melt chocolate, and you should do it OVER a double boiler, never with the pan inside the boiling water. i'd look for another truffle recipe on here, folks.

  • i tried this recipe but substituting the heavy cream with milk and butter mixture. result tasted great but the consistency was soft. i think it will melt at room temp. ill try a different approach heating the cream and adding it to the chocolate instead.

  • Putting your chocolate with water to melt it ups the chance of your ganache breaking, best to get a pot half full of water, simmering. Place a large bowl on top of it, and melt the chocolate, stirring constantly 'til melted, at which adding the butter. When combined and smooth, add cream, and all that jazz.

    If it is smooth, glossy, and of good color and smell, you got it right

    And why would you put water in with the chocolate?? It makes everything grainy. Use cream if its that important. Really, only use fats, like butter. When combining low fats (like milk) with chocolate, boil and pour out onto unmelted chocolate and stir until melted for best texture. Its an emulsion... It splits.

  • @Salzblut Well, thats pressure... Steam does a much worse job at transfering that heat. Thats why a coke gets colder in the fridge faster if you put it in a waterbath, and why chocolate burns (quicker) if the bowl touches the water. Like I said, thats the whole idea behind a bain marie. Water has a higher specific heat capacity and transfers heat extremely quick once heated up (it can "contain" a high amount of energy).

    But I'd save myself the hassle and just melt my chocolate in the microwave.
