According to wiki, they film the two endings then both candidates are given temporary jobs in the six months before the series is screened. They are only told who is hired at the end of the six months.

THE APPRENTICE SECRET: They filmed both of them getting hired. It was only until the show 'The Apprentice: You're Hired' (filmed a day before the show was broadcast) that Simon had only found out he won. The footage as was shown of Simon winning was subsequently used for the final show.
