@ 2 cups of starter tea seems a lot and may lower the pH to much. Depends on how storng/acidic your brew is. In some batches that have been left for over a month you may only need 1 oz or two. Now if your batch is sweet then you'll need more starter tea...having some pH test strips or a meter makes sure you get the pH correct, which should start at 4.5 and the finished tea should drop to around 3 pH
I've noticed that if I add about 2 cups per gallon of reserve from the previous batch I never have a pH issue at all; also the brew turns out great every time.
This is mostly good instructions but how do you get that nasty mushroom ? Pick it from someones yard and out it in muddy water? Why would you leave this step out? C-
@forktool buy organic kombucha tea at your health food store and grow your own from that, search for directions takes about 2-3 weeks for the "mushroom" to form

I usually add about 20% reserve from my last batch to my new batches, which seems to work out.
