Get 3GB for over 1080p or multiple displays. Cards in SLi have all the data duplicated across the cards so you don't just add up your VRAM, if you need more each card needs to have more.
I run 3.6GHz 24/7 on my 920, but stock should be fine.
I have OCZ Gold 1600Mhz DDR3. 6GB is likely just fine, maybe 8GB.

Why gtx 580 3gb ? do you use two ftx 580 each 1.5gb ? or one of 3gb ?
Does it make a lot of different between gtx 580 3gb or 580 1gb ?
I want to buy one card of gtx 580 and i wonder if to buy 3gb or 1gb.
Did you do oc for the process ? I have i7 920 2.67ghz is it enough ?
And what kind of memory you have ? I have g.skill 1600mhz 6gb ( 2*3) but i want to upgrade the memory.
