I think this video was meant to show what a normal Mandarin conversation or message would sound like. This gives a good example of the pace that you would likely hear if you were to engage in a conversation with a Mandarin speaker and they did not know you were not a fluent speaker.

It is slightly intimidating, but only because the words seem like they are, figuratively, flying at your face like a dodgeball.

I look forward to the day when I can follow the language at this speed.

you = oil, fuel

literally, it means "add fuel or adding fuel".

When you say "jia you" to someone else, metaphorically, you are helping that someone "add fuel", to keep him going. hence it is used as a cheering phrase. You could replace "go go go!" with "jia you", afterall, you "add fuel" so that he can "go go go!".
