Dude, if you want to truly pay respect to your wort, which is pronounced wert by the way, you shouldn't aerate the shit out of it when it is on hot side! Homebrewers!!
man at the start of the video you run your finger on the PH tester.... don't you think that is rather stupid considering your fingers may have a high PH due to soap or vinegar from chips etc. it could be the difference between a good beer and a bad beer :O
When running off the mash directly from the tap into the plastic bin are you not worried about hot side aeration? I'd use a pipe to avoid aerating the wort at this stage.

There might be a more efficient false-bottom. But the copper one came with the kettle and has worked fine for 15 years. Every five years or so I will clean it with steel wool to make it shiny again. It will last forever!

Carbonation is acheived by priming the beer with corn sugar (takes about two weeks) or force carbonating with CO2. About 25 PSI for 24-36 hours.
