  • MMMM. I'm a fig fanatic, and I must say I'd MUCH rather whip up a batch of these than buy another pack of Fig Newtons. I'll bet they're a hundred times better.

  • A guy from Lybia gave me these and they were sprinkled with sesame seed and moon shaped! They were delicious.

  • If you want to make them look more like the ma'moul served in Egypt, you can take the bottom of a decorative drinking glass and press it on the top of each cookie to imprint a decorative design. That's what my family does in Egypt. Thanks for posting the recipe. It's a little different than my family uses, but not that much difference. I think they use a little semolina (cream of wheat) in their dough mixture too. We love your recipes. My family in Egypt even watches your videos.

  • U can also find rose water in Indian grocery stores

  • We have these a lot in my country. I prefer them plain. But, try pestachio or almond with their filling. Also, a company here makes them plain but "smothers" them with chocolate, amazing!!! Although rose water is common in Eastern sweets, I hate it. Its taste is strong and rather prominent.

  • thank you so much! I've had these once and loved them! An idea to substitute for rose water, its not exactly but you can steep dried rose buds and still get the aroma =D hope that works!

  • i was surprised when i read ma'moul, i didn't know u guys knew about them.it has spical molds with all kind of designs extremly pretty. u can stuff them with crushed walnuts with alittle sugar or pistachio. it is very fine and soft as u said melt in ur mouth. for kleja it is more of a crispy biscut and it doesnt need molds.

  • @7obeQatar I had never heard of them until I saw them in the magazine and then Googled them. I have seen the pretty molds that you can use for them on YouTube and the end result is very appetizing.

    I would love to try them made with butter instead of shortening.

  • I love Mamoul so much. I can eat a whole plate of them with turkish coffee. I have never seen it made before though. thanks for the recipe. I would use real butter rather than crisco which is hydrogenated fat.

  • @catsmew Butter is saturated fat, so I think both of them are probably equally bad for you. I think just on a flavour level, the butter would be better. I think that the traditional method uses clarified butter, yummy!

  • I know ppl are telling u these r not authentic but as long as u like them its all good :).the 1 u made is almost a cross btwn wat we lebanese call "ghraybeh" (which u used fr the outr layr) & "mamool bi tamer" (which is ma'moul with dates).

    thy're typically made with 3 fillings 1.dates(my least fav :P)2. pistachio3.walnuts.

    all of them use rose and flower water in the filling as well as the outer dough.

    we make them in MASSIVE batches.

    oh and the outerlayer we use semolina and SOO much butter!

  • Lool I had to smile when I saw you made these. They're called kleja in Arabic. We make this ALL the time. It's so popular among Arabs. But we make it in a complete different way. Imma try this.

  • @xSara1551 LOL seriously. My dad has a bakery for this kind of stuff. He makes klitja. This isn't klitja, it's ma'moul! There is a different in texture and in spices and in shape. Omg it's just a different thing ok, srsly im not even gonna explain more. If you want to keep believing this is kletja than go ahead! :D

    we usually use a special molds with different designs in order to have them in the same form and size ...

  • Also, if you have the same book as me, I always found it confusing how it says that it make 2 and 1/2 dozen cookies yet the picture shows a ma'moul with a small filling and a thick dough. That never made sense to me.

  • @cmt869 OMG! That is EXACTLY what I was thinking, I made them just like the photo, small filling and thick dough! didn't make sense to me either. Pretty sure we are talking about the same recipe book

  • I must have the same cookie book as you, I have made this recipe many times. This is an AWESOME cookie! Some quick notes I've learned from making them: orange peel and water in the filling mixture can be substituted with orange juice; if you use brown sugar in the dough it'll have a more appealing colour; thinning out the dough with water helps to stretch it out more so all the filling is used; filling the cookies like they are turnovers, then molding them into ball shapes when filled is easier.

  • sorry ... im lebanese...and this is one of our known desserts... and that's not authentic ma'mool =) ... we dont use shortening nor orange peel... more like orange blossem..and we use ghee .. and yes the pastry should be thin...not thick =)

  • @ziba89 I was waiting for this comment. I put in the description box that I got this recipe from a very general North American cook book and that I only followed the instructions there. These were simplified for North American tastes and ingredients. I never said these were authentic.

  • They look really good. I love buttertarts & date squares so these would be yummy. I just looked there are ways to make your own pure rosewater via Google. I've bought it at a Mid. East store..but yes it was in a bigger center then where I live now. : )

  • If you have a whole foods or a vitamin shop in your town you should be able to find the rosewater. Or you can purchase on Amazon.com

  • A second note: My grandma used to make a lot of authentic Ma'amul when I was young.

    Usually, the dough is rolled out to a rectangular shape and then spread around with the date mixture. Later, my grandma used to roll the dough (like a log cake) and then cut the roll into small segments (2 cm at most). And then she baked the pieces.

    I think that if you'll try to do it like that you wont have excess dates and the dough-dates ratio will be better.

  • Just a quick question. Do you think rolling out the dough thinly and cutting circles would work for the pastry dough like you did the shortbread cookie dough? Or would you just pinch the "cup" thinner next time you made them??

  • Tammy I'm pretty sure that rose water is a staple in most bars for certain mixed cocktails so it should be in liquor stores or the liquor sections of grocery stores. This reminds me so much of the fig cookies the Italians make for St Joseph's day. I love dates so I will definitely try these

  • @jcrefasi1 We don't have liquor sections in our grocery stores as all booze is sold at government run stores, no beer/wine at corner stores either (in Ontario Canada)

  • @StarthatsBerry You mean like Oscar the movie award? If you do a google image search on oscar cupcakes you get lots of oscar the grouches but a couple of oscar award cupcakes. You could make some man shaped cookies and use gold luster dust (available at cake decorating/craft stores) to make him gold, or make gold coloured icing. If you use black cupcake liners and dark icing, they could look like little statuettes, that's all I got!

  • These look really great. If your family really enjoys dates, I recommend you look into a classic British recipe known as sticky toffee pudding!

  • Oh! You know what you can try if you make these again? You should use those uhm...moldy mini bowls you have (the one use you used to pour in the almond extract) and use THAT as a mold for the pastry bowls. Just so they are all the same size. Just an idea. (: Looks yummy!

  • Great Recipe ! My great Aunt used to make these. She used to coat a walnut with the date filling before putting it in the dough! try that its VERY yummy ! Like just wrap the whole walnut with a generous amount of the dates !

  • we had lebanese friends and now we make mamoul every good Thursday as a tradition ! dates are only one variant though. over here you can find the rose water in he asian shops or in a drug store as well.take care !

  • like wht designerhala said , but my mom does them a little diffrent she put all the date in the food proseser till its like a paste then add cardamom , cinnamon and nutmeg which make it smell and taste great too (this means that u dont need to cook it or add extra sugar) , also the ma'moul will be much smaller in a bite size and using the wooden mold will look way more pretty XD i am glad that u tried them :)

  • The mixture of the dates with cinnamon and orange zest really sounds appealing to me. At first I thought you were going to make them sort of like a teeny pie, but then closed it in on itself. fun! What is the PITA factor for it? Time consuming for sure

  • @silverscreamgrl PITA factor was medium, there was just too much dough in these, thinner next time with butter instead of crisco (if there is a next time, my date square is still a favourite, I may add the orange peel and the cinnamon to it next time, I did like those flavours a lot with the dates)

  • Look at you all international!! I meant to tell you that if there is anything you need for a recipe that maangchi makes, please let me know and I would be more than happy to bring it in October!! Or we can find an Asian market. We definitely need to go to the grocery stores some nights. Sneak out when the others are doing lobby time ;)

  • @SuperKK1998 Dates are the fruit of the date palm tree, they are pitted and dried and that's what I used in this recipe.

  • We always serve these on special occasions; they would be wrapped individually and served to guests to take home with them after a visit. There is a wooden mould sold especially for them also, you place the dough inside and it would create an oriental pattern on it. It would be used if you made different kinds of fillings in one batch; the different designs signify that it’s a different type of filling. You made them nicely; my favourite kind is with pistachio nuts :)

  • Hi they look just like how my mom makes it but she also have a different way she takes a piece of pastry and roll it to thin string and do the same with the date and twist them together (like a girl's hair) and bake them:)

  • The international section of my grocery sells rose water. It smells really really good, it has a perfume type fragrance, I tasted it and its actually pretty good..

  • My grocery store sells rose water near the taco shells and Asian spices (I guess that's the "ethnic food section"). It's not hard to find around here, and I don't like in a large area, so it's possible that your grocery store will have it too.

    ...And of course, there's always the internet. I'm sure you can buy rose water online.

  • Theres usually rose water as large grocery stores, like loblaws superstore, sobeys, i even have it at the local dominion. Just look in the same area as the shortening, sweetener, vanilla pods ect. I see it All the time :)

  • am a yemeni that lives in the UAE .. and Ma'amoul is something that we usually have with tea in the afternoon ! and it's made by several arab countries in the occasion of "Eid" after ramadan and Hajj

    it's an amazing snack and nutritious too since it has dates .. try to add some sesame with the date mix .. and before popping them into the oven just spread some egg yolks with a brush and sprinkle some sesame for it to stick ! .. that's the way mom makes it :D
