I watched the program from where this recipe came from, and I believe he suggested that we not use paper towels to dry the chicken. Sure, we'll get rid of the fat, but we'll also get rid of the flavor and crispiness and crunchiness (not Good Eats, is it?).
I met Alton Brown and he couldn't have been more friendly. He tolk his time talking to every person that came up too him. He was very personable and seam like he would talk too you all day like a old Friend. As for his recipes, I haven't found a bad one yet. I learned a lot from his shows and from The American Test Kitchens shows.
I don't know what you did, but I just made this and it came out perfect. Sounds like maybe you didn't put enough oil in the pan or it got too hot. Did you use a cast iron skillet? I would NEVER make fried chicken in anything other than cast iron. That's just asking for trouble.
Alton Brown is one of the most informative host on Food Network TV, or as for that, television in general. You probably live in the projects somewhere sucking off the government. Your mom is probably felony ridden meth infested piece of trash.
If I was there I would. I'd take some... red wine... 'bout a quarter-cup, and then... a wooden spoon... and I'd deglaze the fuck out of that pan. isn't that hot, guys? Oh, yeah. Don't you wanna just... Don't you wanna just get in there and...Mmmh!
Alton is the master genius of cooking theory chef..idk i just made that up put he really is..he doesnt just teach me how to cook..but things i never knew about cooking food
I Think it was soggy skin? I didn't drian or pat the skin dry after I did the Buttermilk soak. When I was friing it the batter wuld fall off. Buut other than that it was good. I'm not really a cook so when I end up doing a new thing it seems to always come out wrong. But, that's part of the funn of cooking.
@zekehooper since I can't do it the way he does, I fry the pieces separately. Going with the thighs then the legs and then the breast next and the wings lastly (since they cook really fast).
SHUT UP AND JUST FRY IT,I'M HUNGRY. D;

It looks overcooked, an internal temp of 170F is fine for chicken. I cook 10 min per side and it comes out perfect.

@moviegeek65
By "perfect", you also mean crispy, right?
gameshowguy2000 2 weeks ago
packaging can only market a product so much..
shahriaraashikkhan 1 month ago
Evidently this guy has a different definition of "perfect" than I do. What i see here is badly overcooked chicken.

The best fried chicken recipe I've ever had. Very crispy outside, moist inside. Spiced just right with this blend. Perfection !

I need help on doing my Chicken legs! I tried it this way and it came out wrong! This is my first time cooking so that may be why? Thanks.

@zekehooper -- What was the problem? Overcooked (burned)? Undercooked (raw or almost raw)? Soggy skin? Bad tasting?
