weeeell, personally, i dont think you should categorize dancing and state only one kind is "correct"; especially since theres so many generes besides hiphop(: Freestyling and adding your own personal swag is one thing, but for the purpose of making an "instructional" video, i think it kind of makes sense why the dancers are more technical here. its usually easier to learn & follow along when the dance is visually clean, sharp, and free from any excess steps.

adding on to what i said earlier, i think that once you learn the basic dance format and can grasp the jist of it, THAN you can move on to adding in your own flavor and style. im sure that if laurie was on stage as a solo dancer doing this choreo, shed be totally "feeling the music", expressing her style, and might even go as far as sticking in some off-of-the-head adlibs. you can tell she kind of is in this video too, espcially towards the end.
