I beat my rivals crobat with pichu. And once, I battled kyogre with pichu, it uses ancient power and left me with 1 hp. I used thunder and killed it. :)

I like to level grinde with wild pokemon in the beginning when you first get the starter. I level grinde all my pokemon before the Elite Four too because I just want t oget to the after game as fast that I can. I also try to balance my team in he beginning so Iam set for all the gyms and Eleite Four.

I got an Umbreon for my party and it evolved at lv 30 so I'm guessing Batman would evolve about that time as long as you don't allow it to faint alot (grooming as you said before will help too)
