You should try mullet roe one day. Very good! I grew up on the Gulf Coast, so I've eaten jillions of them. You remove the entire egg mass from the the fish, usually two of them, and lightly fry them. They are orange colored & sort of carrot shaped. When fried, they are like a sausage: thousands of little eggs contained in a thin skin. They have a light, creamy flavor, not fishy tasting at all. Delicious. I love them. (And mullet too!)

I think it's the colour that would put me off those. That shade of orange is fine in a carrot, but it somehow doesn't look quite healthy in an egg, even a fish egg.
It's to be expected that you would find this... somewhat overwhelming. As you noted, the Japanese use this as substitute for Tarako (Flying Fish Roe) in sushi... and they eat neither by the huge spoonful. It would need the shari and nori to make it palatable... a balancing act of flavors and textures.

Aftertasty is a great word! So many things I don't like because of that- like diet sodas- I can always taste a total aftertaste from drinking those or eating anything with artificial sweeteners!

@FoodOddities I've tried stevia- it didn't seem very sweet to me. I'm a big tea drinker and I like a bit of milk and sugar in my tea and it just didn't seem to work out for it- but maybe I should try it again- I almost bought a stevia plant once. It would be interesting to see if just using the leaves right off the plant might work better- or if it would add a "flavor", as I don't want the true taste of my tea messed up.
