Have u got 5 volts going into the enable pin on the displays as it wont display anything without that enable pin been high and 7.5 volts as main power.

wat do u hook up the LEDs to so the brightness controls still work?

You may need to fix the 5v line going to it.
Or maybe you have wired up the wrong way?

Seems like you are not giving it enough voltage.
It won't work with less than 6V

Nothing on the screen, only screen lit (from adding 5v to pin 12, slot 1). No video on screen?? What is the point of this video BTW?
