The mode i played on the One had all Crits and with a shield that changed colors according to the health. The best way i did the most damage was buy building a sentry, of course one of our snipers threw jarate on him giving my sentry more damage.

But the server mod was only up for 1 night. The next day it was just a regular gamemode.

No they are not. They are capped at 150 damage (unless a CVAR to enable critical backstabs is enabled then its 450 damage). You have look at it this way: if backstabs were instant kill, everyone would go to spy class. Seeing how some rounds are 1 vs 31, that can be a problem.
