@LIVVORNNO I visited a lot of country, and i tried a lot of kitchen, but only in Portugal i ate well! Now, that i'm older, when i go out of Italy i eat only in italian restaurants, and sometimes some meat in some portuguese restaurant!
@luxxka moroccan food is very oily .... and i dont really know but i think that italien food has almost always the same ingredients .... In portugal you have more things to choose , seafoods , meat , fish , salads , stunning desserts.
@luxxka i didn say italian food was close to moroccan . i meaned the ingredients used in the italian food where few, i was not comparing the two .... yes i tried a lot of times italian food ! here in portugal there are many italian restaurants.
@LIVVORNNO Italian food is also divers when it comes to ingredients, same as moroccan, same as basically all cuisines have an extensive use of ingredients. You don't think they eat seafood in Italy or in Morocco? Moroccan cuisine needs very different spices.
@Skori100 I feel the stench from here and I feel like throwing up...

I agree with those who say that Chicken tagine with potatoes (and carrots) is typical - certainly in Essaouira and Marrakech, so perhaps there are regional differences. I certainly found that despite chicken with preserved lemons and olives seeming to be the most famous, due to the amount of available recipes, I did not find it to be as commonly available as the variety with potatoes and carrots.
i have lived in Morocco and ived in Ifrane for several months and had Chicken with Potato quite a bit. The local souk we ate at always mixed it up. So if you are Moroccan and have never had it that is pretty lame. Can someone say loser.

Sorry to say, but there are no define recipes.
You just learn cooking marrocan food by being in a marrocan household.
I'll try to get my mom to teach me some tajines and other recipes as i'm growing older and I'll probably head out of the house soon.
Or I'll just marry a marrocan girl who an cook ;)
