If you want that thick, symphonic sound without going into extreme metal, I'd highly recommend Ayreon. Also listen to Symphony X if you haven't already.

@RakerR22 Well if you still care there are several more I can reccomend, Two good ones are Freedom Call and Savage Circus, I haven't really got into them yet so I can't really say much, but from what I've heard they sound good. Another one is ElvenKing, I've seen them get some flak from other metalheads, but I always really liked them. And lastly and probably the most underated would be a band called Forgotten Tales. They're obscure, but I HIGHLY reccomend them to any metalhead reading this.
