Even though I know nothing about homebrewing I totally agree about the difference between extract kit can brewing and all-grain brewing. Kit cans are good for beginners, but they are essentially the equivalent of a frozen pizza or even hotpockets as compared to pizza you'd get at a fine Italian restaurant.
The problem is all grain brewing requires spending a lot of money and time and experience.

Maybe "the best home brew supply shop in Canada" as you refer to it isn't what you say it is? So you lied again. Judging by your "other lives" on youtube, you do this alot. Why do you do that for?

There's too many variables involved. I've had extract kits come out differently, and I've had them come out right on the nose.
Just for grins, I'm going to order an all-grain kit from one of the big boys (probably AustinHomebrew) just to see what happens.

where did you get the .6 # DME equivalent? never heard that...not saying it is wrong, just a legitimate question.

@JOMalone3113 Aromatic is a kilned malt that adds strong malt aroma and darker color to your beers. It was named so bc of the fact that it adds more aroma than most other kilned malts.
@JOMalone3113 and using less crystal 40 as a sub for crystal 20 is wrong. C40 tastes different than C20. adding any 40 to a beer that was meant to be C20 will change the flavor profile of the beer. Ask Jamil or Tasty about that. the colors will be similar in the sub u r talking about but not the flavor. Nice try though.
@JOMalone3113 Yes I know but now is not the time to split hairs to noobs. You can't expect them to add a lb to their grain bill when they trying for the first time and spending that much on DME. They can substitute that grain and even do without the Carapills and wheat if they really wanted to although both will add to mouth feel and texture. They need for sure the DME, Crystal, and Munich. The DME has Carapills in it. The small .13 Aroma vs substitution wouldn't make that much of a difference.
@TakeSomeAdvice I dont disagree with the lack of need for carapils and maybe the aromatic, although you can def notice a diff in a beer that has it and one that doesnt. But what I am saying is you are changing the recipe to something diff than what Tom had originally intended and the beer you are proposing is not the same beer. If that was your intention, then fine, but I dont understand asking for recipes then changing them to the point that they are not close to the original
agree with what Bobby said......there IS a reason the malt companies have different levels of roasting, it's because of the flavor and color it brings to the beer.
If you go to substituting things in a regular food recipe, you are NOT gonna end up with the end result that the recipe was intended to be.
Same with the beer....you can tweek a LITTLE, but go overboard and the beer will NOT be in true character with the recipe OR style.
Just a little nit picky comment here. You can play with varying amounts of crystal to push the color to where it needs to be, but you can't go overboard. 1/2lb of 80L might make the same color addition as 1 pound of 40L but there are two problems. First, it's still only half the caramel so the sweetness will be less. Also, once you get say 40L apart, the actual flavor contribution is different. 80-120L start getting raisiny where 40L and below have none of that. Suggest to sub only 5-20L apart
@BobbyFromNJ Yup you're right. I recommended the replacement based of Jamil's recommendation when someone asked if he could just use less of 120L instead of 40L. He said you could but would get raisin flavors.
So I recommended 40L as a happy medium just to show the possibility is there and wouldn't effect the beer that much.
I also said any malts below the base malts was 'flavor malts' which isn't true either but I didn't want to over complicat things.

TSA... Hey ya, all homebrew shops on the web((Midwest supplies, Northern brewer, MoreBeer and Austin Homebrew) default to extract kits. Why, because 80% percent of brewers brew those type of kits. You just have to look under the all-grain sections.
Now LME is not as bad as you keep saying, I started out brewing kits with LME in 2000 and had no off flavors. I did ferment at correct temps so I guessing that is a factor.

@Chad9976 I don't think it's fair to lump ALL kits into the " Coopers tin can kits" though.
A lot of good homebrewing shops will carry a good quality malt that most likely wouldn't even compare to some of the canned stuff.
That said, I've never used Coopers malt, so I can't vouch for the quality, one way or the other.

I make my beer according to what I like.
I don't use other recipes.
I study the malt, hop and yeast profiles and brew according to how I want it to taste.
I'm not much of a hop person, so my beers tend to be on the more malty side.
but you have to know what each component lends to the recipe and then combine them to create your beer.
I like malty, less hoppy beers brewed with noble hops...thats just me.

@jturie if you get your LME from a good reputable homebrew shop, it should be fresh. The stuff I always got was top notch...
I'll brew with extract and specialty grains OR all grain...just depends on how much time I have on my hands.
The all grain IS fun, but more time consuming.
