I removed the end part of it and the root and peeled off like one outer layer and the rest i cut into similar pieces as the video. I added it together with the ginger to fry cause I thought it might not cook otherwise.. I left it to simmer for long under a lid.. but still the lemongrass was hard =/
@nalanuss in this dish, like in most dishes, lemongrass is for flavoring only. cambodians use it in most of our dishes too and often we do not eat it unless it's been grounded to small pieces. once cooked, we either remove it completely from the dish. if we leave it in there, it's maybe to get the aroma but we don't eat it. hope this helps

i think its because of the chicken skin, it adds a little more oil into the dish.
