For the health nuts....replace butter for olive oil...extra virgin....You may add a little butter if you want the sauce creamy, OR no butter at all and use 1/3 a shot glass with corn starch....and mix in with just enough water until the corn starch dissolves in the water...no more or less....and pour into marsala w/ chicken 2 min before pulling it off the heat to make a creamy sauce.
@pastryparrot1 Thanks for sharing your recipe! Have a wonderful week as well...Just an update to what I said...the starch will make the sauce very thick...so use as little as possible if you don't want it very thick. I should state you may want to pour the starch on 4 min before pulling it off the heat if your using heat shy of medium heat. You want to make sure you cook the starch so you can't taste it, but at a high heat 2-3 min should be enough...or medium heat 4-5 min, sorry for rambling :)
@williamskat1 Hi William! Marsala is a Sicilian wine. You can substitute it for port or dry sherry (not cooking sherry). The flavor will be different but it will do. Thank you very much for coming by!
@pastryparrot1 wow thank you. I have been making chicken marsala and I have been using cooking wine but I know real wine will be way better so Im going to make chicken marsala your way on my baby's first birthday, thanks for sharing ..
@pastryparrot1 Technically this is a non-alcoholic marsala dish. It's difficult to cook anything and preserve the alcohol when you fry it in a skillet for even just a few minutes. Just like making Vodka sauce...and vodka has more than twice the alcohol content. Nice recipe!!
@pastryparrot1...do you know the lady cooking? Please get her to do a cheese polenta with rabbit. That's my favorite Italian and I only had it once at a cooking show.
It's janice from Sopranos

To make a nice chicken "marsala" non-alcoholic, try a quarter cup of good cider vinegar with additional half cup of chicken broth.

nice, but what could i use instead of the Marsala?
CookingHalal 2 years ago
I would try a sweet sherry or a madeira wine. The flavor will be completely different but it will do.
pastryparrot1 2 years ago
sorry, i ment something non-alcoholic
CookingHalal 2 years ago
I really can't think of a nonalcoholic version of chicken marsala. Sorry! :(
