The statues, from what I can tell, seem to be actual people covered in cement. I mean look at how it's spread, and the globs on the floor? No carved statue looks like that after it's done.

And as for the poem, I think it's a metaphor.

He's referring not so much to actual rabbit ears, but more so to the mask you see him wearing, which is modeled after a rabbit.

It seems to be that he wants to take his mask off; and go back to normal, to how it used to be in Rapture, but knows it's impossible.
