People have different ways to be motivated, the feeble should stay out of his kitchen

  • A quick google search and I found this recipe.  It's not 100% UHT, it's a mixture of double cream and UHT milk.

    I'm not 100% sure but I think he stole this off MPW.

  • @JimmyChiffels no because a flan is cooked with the caramel in the bottom and after it cooks and its turned over, the caramel becomes a sauce. it is still a creme brulee because the sugar on top is still "burnt" and hard as candy.

  • If you are substituting some egg yolks for UHT milk.... how many eggs would you use with UHT compared to that of the 'traditional' recipe? and do you use any extra UHT as a result?

  • It's weird, on the recipe for this the number of egg yolks seems to be the same (1 per 100ml) combined milk and cream - so 300ml cream, 100ml milk is still 4 yolks, which is a standard ratio for creme brulee. You could probably reduce by a yolk by the equivalent amount of milk and it would be ok.

  • Maybe he means that because UHT has a higher fat content, the flavour is more apparent, and it tastes less like eggs as a result.

  • i think he's saying that since the fat in whipping cream is one of the main setting agents in creme brulee. apart from the egg yolks holding it together, when the cream in the custard, cools, it stiffens.

  • Except it doesn't use whipping cream, it uses UHT milk, which contains more fat than normal milk and helps to set the custard without the excessive use of egg yolks.

    Therefore, the fat content, and therefore creamy texture, of the brulee can be achieved without an egg flavour spoiling the dish.

  • The flavour would be less apparent if there is a higher fat content.

    It would be longer lasting, and the after taste would be better, because fat traps flavour molecules, preventing them from going straight to the olfactory bulb when the food cells are broken down.

  • I wouldn't mind having the recipe for this creme brulee. The rhubarb sounds interesting. And he spoke of something that I didn't quite catch, about how it's less eggy than traditional creme brulee. He IS an amazing chef.

  • He's talking about using UHD Milk or something, about how it has a higher concentration of fat so that you can use less milk cause he doesn't like the eggy taste and texture that the normal recipe calls for. Using less eggs provides a smoother, creamier texture.

  • I think he said UHT milk. That's ultra high temperature pasturization. It's otherwise known as long life milk because you can leave it unopened on the shelf for months. Not that popular in the states, but many places in the UK sell it including some of the milk delivery services.
