1.08 watch the guy blow on the plate, thats disgusting. Wonder if all of Ramsays kitchens have the same kind of kitchen staff, there are no hygiene practices displayed in this kitchen at all
@enishicz28 The definition of a creme caramel is 'a custard that is baked in a caramel-lined mold and served chilled with the caramel side up'. Seriously get your food names correct before challenging comments
@Antzrider1 let's see, he turns the custard out, puts the caramel on top, sounds like creme caramel to me. Not to mention he even states that they put rhubarb on the bottom and bake it, which is basically just replacing the caramel with rhubarb.
@enishicz28 oh, I think you heard the video wrong, he says he 'caramalises' the top (coats in sugar and uses a blowtorch), not puts caramel on the top.
I hould have watched this for my comp, i did a creme brulee *my interpretation* and i wanted to tae it out of the mold BUT it was too soft so when i caramelized it jut went everywhere... still got 2nd place though :D
How does he get the caramalised top to it? Obviously noramlly you would just use a blowtorch and sugar, but it seems as though the caramalised top is already in the container. Anyone?
@Bennyboy65 maybe it was broiled? The one he had in his hand looked like it just had custard without the caramelized top, but the one on the plate might have been a part of a separate batch that was caramelized
So is turning off the tap after washing your hands in a public toilet. Man takes shit Man wipes arse Man gets some shit on thumb as paper splits Man wipes shit off thumb Man turns on tap, transferring germs to tap Man washes hands Man turns off tap Next man turns on tap, and washes hands Man turns off tap, picking up the germs from the first man's shit Same applies to touching the door
@keshrideepak fucking culinary school students, they think they know everything while in there. when in fact they know nothing. thats fucking Gordon Ramsay he can do whatever he wants.
@keshrideepak What about the assistant breathing fiercely over the plate before turning the creme onto it........? Free light saliva sauce included for the same price. Yummmmm
@JimmyChiffels no because a flan is cooked with the caramel in the bottom and after it cooks and its turned over, the caramel becomes a sauce. it is still a creme brulee because the sugar on top is still "burnt" and hard as candy.
@beserker24 have you ever had ice cream? egg nog? flan? creme caramel? creme anglaise? those are all custards. how can anyone go through a lifetime with out tasting custard. unless you live in a cave I suppose.
First he's with his hands in his hair all the time. I've seen other chefs do that and it's disgusting.
Second, UHF milk is an inferior product. If the heated real cream/ fesh milk mixture (together with way higher fat content than UHF) is carefully blended into the beaten eggs, you will not get a "horrible" egg structure. He just streamlined the process with an inferior product to be faster and cheaper, that's all. I have no respect for this man.
have you seen marco pierre hair and how he touches it every 5 deconds? Ohh btw do you have 3 michelin stars? No I don't think so.. Do you even know how a kitchen runs?
Lmao because he runs his hands through his hair you don't respect him ? this guy (along with marco as the guy above mentioned) is an amazing chef who you could probably not come close to cooking as well as, this guy is amazing stop hating.
If you are substituting some egg yolks for UHT milk.... how many eggs would you use with UHT compared to that of the 'traditional' recipe? and do you use any extra UHT as a result?
It's weird, on the recipe for this the number of egg yolks seems to be the same (1 per 100ml) combined milk and cream - so 300ml cream, 100ml milk is still 4 yolks, which is a standard ratio for creme brulee. You could probably reduce by a yolk by the equivalent amount of milk and it would be ok.
i think he's saying that since the fat in whipping cream is one of the main setting agents in creme brulee. apart from the egg yolks holding it together, when the cream in the custard, cools, it stiffens.
Except it doesn't use whipping cream, it uses UHT milk, which contains more fat than normal milk and helps to set the custard without the excessive use of egg yolks.
Therefore, the fat content, and therefore creamy texture, of the brulee can be achieved without an egg flavour spoiling the dish.
The flavour would be less apparent if there is a higher fat content.
It would be longer lasting, and the after taste would be better, because fat traps flavour molecules, preventing them from going straight to the olfactory bulb when the food cells are broken down.
man he is pretty awesome. he really does know his stuff. and coming up with a way to turn it our of the mold and serve it differently, but not totally bastardizing the original is great.
I wouldn't mind having the recipe for this creme brulee. The rhubarb sounds interesting. And he spoke of something that I didn't quite catch, about how it's less eggy than traditional creme brulee. He IS an amazing chef.
He's talking about using UHD Milk or something, about how it has a higher concentration of fat so that you can use less milk cause he doesn't like the eggy taste and texture that the normal recipe calls for. Using less eggs provides a smoother, creamier texture.
I think he said UHT milk. That's ultra high temperature pasturization. It's otherwise known as long life milk because you can leave it unopened on the shelf for months. Not that popular in the states, but many places in the UK sell it including some of the milk delivery services.
People forget that he earned the right to judge others to such high standards. One of the world's best chefs. Now the attitude, that's just great TV. :)
good idea

@enishicz28 ..you should know your stuff before writing that, it is not a creme caramel when turned out
Antzrider1 1 year ago
@Antzrider1 yes it is
enishicz28 1 year ago
@enishicz28 The definition of a creme caramel is 'a custard that is baked in a caramel-lined mold and served chilled with the caramel side up'. Seriously get your food names correct before challenging comments
Antzrider1 1 year ago
@Antzrider1 let's see, he turns the custard out, puts the caramel on top, sounds like creme caramel to me. Not to mention he even states that they put rhubarb on the bottom and bake it, which is basically just replacing the caramel with rhubarb.
enishicz28 1 year ago
@enishicz28 oh, I think you heard the video wrong, he says he 'caramalises' the top (coats in sugar and uses a blowtorch), not puts caramel on the top.
Antzrider1 1 year ago
@enishicz28 it doesn't have to be

A quick google search and I found this recipe. It's not 100% UHT, it's a mixture of double cream and UHT milk.
I'm not 100% sure but I think he stole this off MPW.
kebl0826 1 year ago
yeah, take it out of the mold..it's called FLAN you DONKEY!

jrr1234567890 2 years ago
lol i love it. hes told DONT take it out of the bowl. So he makes a recipe so he can and its a success.
Paiste402 2 years ago 2
My mistake the are using blowtorches
Bennyboy65 2 years ago
How does he get the caramalised top to it? Obviously noramlly you would just use a blowtorch and sugar, but it seems as though the caramalised top is already in the container. Anyone?
Bennyboy65 2 years ago
@Bennyboy65 maybe it was broiled? The one he had in his hand looked like it just had custard without the caramelized top, but the one on the plate might have been a part of a separate batch that was caramelized

any1 see how the chef looked at ramsey when he mentioned uht milk?
slippy4321 2 years ago
wouldn't that be like a flan than a creme brule?
JimmyChiffels 2 years ago
@JimmyChiffels no because a flan is cooked with the caramel in the bottom and after it cooks and its turned over, the caramel becomes a sauce. it is still a creme brulee because the sugar on top is still "burnt" and hard as candy.
ac3jc 2 years ago
you idiot you never turn out creme brulee hahahah

@beserker24 have you ever had ice cream? egg nog? flan? creme caramel? creme anglaise? those are all custards. how can anyone go through a lifetime with out tasting custard. unless you live in a cave I suppose.
ac3jc 2 years ago
joebloke you're an asshole. He never brought up uhf milk. He does this for a reason because of the texture of the creme brulee,

If you are substituting some egg yolks for UHT milk.... how many eggs would you use with UHT compared to that of the 'traditional' recipe? and do you use any extra UHT as a result?
larsulrich63 3 years ago
It's weird, on the recipe for this the number of egg yolks seems to be the same (1 per 100ml) combined milk and cream - so 300ml cream, 100ml milk is still 4 yolks, which is a standard ratio for creme brulee. You could probably reduce by a yolk by the equivalent amount of milk and it would be ok.
rp1816 2 years ago
Maybe he means that because UHT has a higher fat content, the flavour is more apparent, and it tastes less like eggs as a result.
wahoo202 2 years ago
i think he's saying that since the fat in whipping cream is one of the main setting agents in creme brulee. apart from the egg yolks holding it together, when the cream in the custard, cools, it stiffens.
chefkoo 2 years ago
Except it doesn't use whipping cream, it uses UHT milk, which contains more fat than normal milk and helps to set the custard without the excessive use of egg yolks.
Therefore, the fat content, and therefore creamy texture, of the brulee can be achieved without an egg flavour spoiling the dish.
p3rs0nan0ngrata 2 years ago
The flavour would be less apparent if there is a higher fat content.
It would be longer lasting, and the after taste would be better, because fat traps flavour molecules, preventing them from going straight to the olfactory bulb when the food cells are broken down.
p3rs0nan0ngrata 2 years ago
Fascinating! Do you by any chance have the rest of the programme?
lb1770 3 years ago
man he is pretty awesome. he really does know his stuff. and coming up with a way to turn it our of the mold and serve it differently, but not totally bastardizing the original is great.
mcgoo721 3 years ago
I wouldn't mind having the recipe for this creme brulee. The rhubarb sounds interesting. And he spoke of something that I didn't quite catch, about how it's less eggy than traditional creme brulee. He IS an amazing chef.
timmi59 3 years ago
He's talking about using UHD Milk or something, about how it has a higher concentration of fat so that you can use less milk cause he doesn't like the eggy taste and texture that the normal recipe calls for. Using less eggs provides a smoother, creamier texture.
Zephilindrum 3 years ago
I think he said UHT milk. That's ultra high temperature pasturization. It's otherwise known as long life milk because you can leave it unopened on the shelf for months. Not that popular in the states, but many places in the UK sell it including some of the milk delivery services.
