if that was me sharpening that as fast as he was, no gloves rinsing the knife that quickly. that water would be red from my sliced fingers. much props that knife looked ridiculously sharp.
They all have different characteristics. Since he was quenching in water, he was probably using something closer to 1095. It also looks like those knives had a softer steel (like 8160) or iron forge welded to one side. That is traditionally how they are done.
actually, 1% carbon or slightly higher, most likely blue steel # 2 or white steel # 2. both are very pure steels made directly from black sand ore rather than scrap; the blue steel has about 2% tungsten. the softer steel is a very low carbon steel, close to western 1010, or sometimes salvaged wrought iron for the really fancy blades.
