  • @aeriskitchen I couldn't get it look and feel the way you did. Mine kept getting powdery as i kept kneading the dough but i didnt havethe machine so i did it forever,..... and it didn't work . I will try again cause it looks like you updated your ingredients.. but I'm so sad cause i really wanted this T_T but i think my mom has the machine now hehe i will try again (:

  • @jema2609 i think it would be glutinous rice flour because glutinous rice flour is usually used for sticky thingies like mochi :D

  • @jema2609 glutinnous rice flour (usually in a green colored bag) is different- made of sticky rice. you want regular rice flour- usually in the red colored bag.

    but you need damp cloth

    and if you don't have machine just use your hand to knead

I am living overseas and we cannot get these here but we can get rice flour sometimes I am looking forward to trying to make them to give to my Korean friends for a gift sometime as they get people to send it to them from Korea sometimes but don't get to have ricecakes very often.

  • @Hamsterlina1512 brunei HAS lots of fresh hot peppers, and definitely has tons of hot chili powder.... korean hot pepper paste has other ingredients in it (soya paste for example) that gives its unique taste....

    sorry..but that's what you need.. because the taste and texture will not be right if it's not short grain rice..

  • @fowardtothis If you can get short grain rice you can probably gind it in a blender or spice grinder to get rice flour that way.

    Wash and soak some short grain rice in water for about 3 hours..and then drain for about 2 hours.. then grind the rice in mixer.. then.. shift the rice powder in strainer or shifter.. if you want more fine result.. shift twice.. thanks ^^

  • i've tried this.. but, i still don't understand, why after it has been steamed it turn out to be TOO HARD.. and i dont have the dough maker.. so i thought of just knead it.. but, steaming the mixture of rice flour and water, seems to be turn out bad.. i really wanna cook ddukbokki, but, since in malaysia, it seems hard to find readymade rice cake, i think i have to make it my own.. but its not working..

  • @aeriskitchen i read your previou comment, that u said, if i intent to knead it by hands, i should replace half of the rice flour with sweet rice flour.. i tried..and after it is cooked, its texture is chewy.. is it supposed to be chewy? sorry for asking bcoz, i haven't had ddukbokki before.. :)

  • @puregurlz I live in Malaysia. So, I understand the difficulties in finding rice cakes. My mum taught me how to get the right texture when steaming the dough.(before kneading by hand!) We need to adjust the water used. And she suggested that I mixed in two tbsp of glutinous rice flour into the rice flour mix.It's the rice, different quality or something like that. Hope this helps.

  • @aeriskitchen ..first it be like liquid..then i add flour to make it stick..then it sooo sticky like gum and it cannot be like your sticky rice cake..(i knead the dough almost 20 minute) =(

    *i dont use bread machine but i change the 3 rice flour into 1 and half cup sweet rice flour + 1 and half rice flour and 1 and half water..

    did u think i put too many water???

    I didn't try it before.. but seems like.. it will work.. if you knead the cooked rice really well with right amount of water... the rice maybe should be hot steamed.. not dry or old.. but it's just my imagination.. not sure the result.. sorry..

  • @jualkyn If you don’t have a bread machine, you can make the sticky rice cakes with 1½ cups of rice flour and 1½ cups of sweet rice flour instead of 3 cups of rice flour. Hand knead the dough for at about 10 minutes. Rice cakes made this way will be inferior to using a machine; hand kneading does not make a good texture for the rice cakes. (i copy this from aeri's blog..hope this will help u)

  • the steaming before kneading didn't work for me so i asked my mom and we experimented a bit to find an alternative for making ddeok.

    since i don't know the consistency of real ddeok but i think i got sth similar.

    i used the same amount of ingredients as listed. i boiled the water first and added little by little to the flour-salt-mix and kneaded fast(it was hot-). then i formed the dough into ddeoksize with sesameoil-water and steamed them for about 10min- done

    now aeri, tell me is it the same?

  • @crenmao i tried to cook ddeokbokki with those and some ramen(after several attempt of finding the perfect recipe for me i got nasty and put some ramen,sausage,meatballs,ketchu­p,pizzacheese in it ...i love it..i love cheese). the ddeokbokki tasted good and the ddeok was chewy.

    idk but maybe you can try this out and tell me if i succeeded in finding an alternative (my mom is curious too ^^ because she does her famous ricenoodle this way)

    Whatever you use.. it should be okay that air (steam) can go through from bottom to top (from boiling water to the dough)... like cheese cloth..

  • @oKeegan for a snack, cook them in the frying pan with some oil until golden brown and eat them by dipping them in honey. beware: any rice smushed together like this contains a lot of carbs/calories

    yes.. you can use a home beater.. just make sure..the blade is strong enough to handle the dough. so it will not be broken. If you don't have sesame oil.. you can use normal cooking oil.. (not too much.. ) or just water.. thanks

    yes.. knead the dough with your hand..but you have to knead it for a long time until it get nice chewy texture.. to cheat a little for the right texture.. when you use your hand.. I added a little sweet rice flour.. you can see more details in my blog .. thanks

  • @aeriskitchen Sooo... There's different types of rice flour in my lokal grocery store, glutinous, white and sweet rice flour, should I go for the white rice flour? You say you can't use mochiko, but mochiko is made from short grained rice, isn't it?? I am very confused xD And I thought sweet and glutinous rice flour was the same type... Sigh :(

    nope.. for right texture and flavor.. check my "Korean Food: Sweet Rice Cake with Red Bean Paste (찹쌀떡)" that rice cakes can be used for potbaingsu.. just make it sweeter..

    did you use right kind of rice flour ??? if the dough is too hard.. add a little bit of hot water and try to knead the dough again..

    yes.. sushi rice flour is right kind to use.. if you grind them by yourself.. it should be very fine..
