@jema2609 glutinnous rice flour (usually in a green colored bag) is different- made of sticky rice. you want regular rice flour- usually in the red colored bag.

@puregurlz I live in Malaysia. So, I understand the difficulties in finding rice cakes. My mum taught me how to get the right texture when steaming the dough.(before kneading by hand!) We need to adjust the water used. And she suggested that I mixed in two tbsp of glutinous rice flour into the rice flour mix.It's the rice, different quality or something like that. Hope this helps.

@jualkyn If you don’t have a bread machine, you can make the sticky rice cakes with 1½ cups of rice flour and 1½ cups of sweet rice flour instead of 3 cups of rice flour. Hand knead the dough for at about 10 minutes. Rice cakes made this way will be inferior to using a machine; hand kneading does not make a good texture for the rice cakes. (i copy this from aeri's blog..hope this will help u)
on my blog check "Sweet Rice & Red Bean Tteok" recipe.. you can use the dough for potbingsu.. just make smaller amount..and add more sugar to the batter..
the steaming before kneading didn't work for me so i asked my mom and we experimented a bit to find an alternative for making ddeok.
since i don't know the consistency of real ddeok but i think i got sth similar.
i used the same amount of ingredients as listed. i boiled the water first and added little by little to the flour-salt-mix and kneaded fast(it was hot-). then i formed the dough into ddeoksize with sesameoil-water and steamed them for about 10min- done
@crenmao i tried to cook ddeokbokki with those and some ramen(after several attempt of finding the perfect recipe for me i got nasty and put some ramen,sausage,meatballs,ketchup,pizzacheese in it ...i love it..i love cheese). the ddeokbokki tasted good and the ddeok was chewy.
idk but maybe you can try this out and tell me if i succeeded in finding an alternative (my mom is curious too ^^ because she does her famous ricenoodle this way)
@oKeegan for a snack, cook them in the frying pan with some oil until golden brown and eat them by dipping them in honey. beware: any rice smushed together like this contains a lot of carbs/calories

yes.. you can use a home beater.. just make sure..the blade is strong enough to handle the dough. so it will not be broken. If you don't have sesame oil.. you can use normal cooking oil.. (not too much.. ) or just water.. thanks

sorry but you need short grain rice flour. because if you only use glutinous rice flour (mochiko). the texture and flavor will not be right for this.. sorry..
@aeriskitchen Sooo... There's different types of rice flour in my lokal grocery store, glutinous, white and sweet rice flour, should I go for the white rice flour? @TheLunastar501 if you like plain taste just frying in the fan with some oil until crispy
don't put too much oil about 1tbsp will be enough
and eat as is or if you like sweet you can dip in the honey: )
or make tteokbokki if you like sweet and spicy taste
you can keep it about one week or little longer in the refrigerator
or longer time in a freezer
it'll turn to hard texture after you make it but don't worry still you can eat as I described above

hi!! this is so helpful!! i've always wanted to make ddukbokku but i live in a small town in mexico and it is really hard to find it... :3 i'm gonna try it!
by the way... i can use a home beater?? and if i don't have sesame oil... what kind of oil can i use??? like i said... is really hard to find those ingredients...

yes.. you can use a home beater.. just make sure..the blade is strong enough to handle the dough. so it will not be broken. If you don't have sesame oil.. you can use normal cooking oil.. (not too much.. ) or just water.. thanks

yes.. knead the dough with your hand..but you have to knead it for a long time until it get nice chewy texture.. to cheat a little for the right texture.. when you use your hand.. I added a little sweet rice flour.. you can see more details in my blog .. thanks

what if i only have sweet rice flour form japan?
also i don't have bread kneading machine can i use pounding techniques? or some other ways to beat the dough, like slam it repeatedly on the counter top etc.

if you think.. that machine is strong enough to handle steamed rice dough.. you can try.. if you want to try the method to knead the dough by hands.. please check my blog..it has more detail in it..

sorry but you need short grain rice flour. because if you only use glutinous rice flour (mochiko). the texture and flavor will not be right for this.. sorry..

@aeriskitchen Sooo... There's different types of rice flour in my lokal grocery store, glutinous, white and sweet rice flour, should I go for the white rice flour? You say you can't use mochiko, but mochiko is made from short grained rice, isn't it?? I am very confused xD And I thought sweet and glutinous rice flour was the same type... Sigh :(

nope.. for right texture and flavor.. check my "Korean Food: Sweet Rice Cake with Red Bean Paste (찹쌀떡)" that rice cakes can be used for potbaingsu.. just make it sweeter..

ooooh in china they put sugar cubes in it but the rice cakes are ball formed :) my family makes them a lot *o*

yes.. sushi rice flour is right kind to use.. if you grind them by yourself.. it should be very fine..
