@TheRationalTeller first of all, i've never seen a jew exclaim "jewish!" when asked what ethnicity they are...and secondly, there has never been a definitive consensus about whether judaism was strictly a religion or a religion and/or an ethnicity...during the world war, around the time of the holocaust, jews were required to mark "jewish" on their passports under ethnicity...so it's not absurd for a jew to consider being jewish as an ethnic identity on some level
